He is a rising talent and is one of the most exciting up and coming chefs right now. He comes with heavy culinary experience, having worked at the best kitchens from around the world and under world class chefs such as Chef Rene Redzepi, Heston Blumenthal and more.
Known for his unique take and creative cooking inspired by Asia, merging food with purpose and essence of life. Chef Esca encapsulates his journeys and imaginations in pursuit to create the future of Asian gastronomy.
In past two years, from Melbourne to Kuala Lumpur to London to Mumbai to Hokkaido to Bali to Saigon to Hong Kong & more, he has travelled the globe to do takeovers, pop ups, food concepts and collaborations with the best, from wine bars, resorts, clubs, 5 star hotels, iconic institutions, 50 best & Michelin restaurants
Michael Iskandar
With more than a decade of experience in kitchens across Australia and Asia, Michael Iskandar brings passion, creativity, and calm leadership to his role as Head Chef at TYGA.
Before joining TYGA, Michael spent several years at Pt. Leo Estate on the Mornington Peninsula; home to the one hatted Pt. Leo Restaurant and the Two Hat Laura Restaurant, both proudly awarded by the Good Food Guide.
A graduate of Le Cordon Bleu Sydney and Shatec Institutes Singapore, Michael has honed his craft at some of the region’s most celebrated restaurants, including Rockpool Bar & Grill Sydney, Lakehouse Daylesford, and Akira Back Jakarta. His food reflects a love of fresh produce, refined technique, and honest flavour, shaped by years of learning from some of the industry’s best.
