Tailored in Paris and now leading the venue in Carnegie, Pauline brings her signature blend of elegance, expertise, and good vibes to TYGA. A trained sommelier with experience at Entrecôte and The Botanical Hotel Melbourne, she’s refined her craft across France, Chile, and Australia.

From Paris to Melbourne’s vibrant dining scene, Pauline has built her career around one belief — great hospitality is about connection. Whether she’s curating the energy of the floor or pairing the perfect wine, her focus is always on creating moments that feel genuine and unforgettable.
